Originating in the Mediterranean region, this simple, rustic and veggie-packed Chickpea Soup is a complete meal in a bowl. You can even make it heavier by adding some pasta. Here’s the recipe.

1.5 cups chickpeas, boiled 1 cup tomato puree ¼ cup sweet potato, chopped ½ cup onion, chopped ¼ cup carrots, chopped ¼ cup red bell pepper, chopped 1 tbsp ginger-garlic paste ½ tsp cumin seeds ½ tsp turmeric powder 1 tsp red chilli powder 4 cups vegetable broth ½ cup coriander leaves, chopped Salt, to taste 2 tbsp oil

Heat oil in a large pot, then add cumin seeds, ginger-garlic paste and onions.
Saute for 5 minutes, then add the sweet potato, carrots, bell pepper, chickpeas and mix well.

Now add the turmeric powder, red chilli powder, salt and tomato puree. Mix well and saute for 10 minutes.

Add the broth and let everything simmer together on low heat for half an hour while covered.

Garnish the Chickpea Soup with coriander leaves and serve while it is still warm.
