200 grams button mushrooms 1 finely chopped onion 1/2 teaspoon crushed garlic 1 cup water 1 cup milk 2 tbsp cream 1 tbsp refined flour 2 tbsp butter 1 tsp chopped cilantro 1/2 tsp ground pepper Salt, to taste

Rinse white button mushrooms, then chop them in halves or quarters.

Melt butter in a heavy saucepan and add the finely chopped onions and garlic.

Sauté stirring often on medium-low heat till the onions soften and become translucent.

Add the sliced or chopped mushrooms and sauté till the mushrooms start to release water.

Cook till all the water dries up and the mushrooms become a light golden colour.

Add the flour and sauté for 3 to 4 minutes, stirring often on a low to medium-low heat.

Add freshly crushed black pepper, followed by water and then milk.

Stir well and season with salt and simmer on a low to medium-low heat till the soup has thickened.

Switch off the heat before adding the cream and pouring the soup into serving bowls after garnishing with some cilantro and cream.
