Make your Christmas even merrier with this easy-to-make coffee cake. The crumbly, melt-in-mouth texture and the blend of cinnamon with other ingredients make this cake scrumptious. The cake is best enjoyed for breakfast with a cup of tea or coffee.

1 1/2 cups all-purpose flour 1 cup granulated sugar 1/2 cup unsalted butter, softened 1/2 cup milk 1 large egg 1 1/2 teaspoons baking powder 1/2 teaspoon vanilla extract 1/4 teaspoon salt

1/4 cup granulated sugar 1/4 cup all-purpose flour 2 tablespoons unsalted butter, melted 1 teaspoon ground cinnamon

Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius). Coat a 9-inch square baking pan with cooking spray and flour.

For the streusel topping, combine the sugar, flour, melted butter, and ground cinnamon in a small mixing dish. Place aside.

Cream butter and sugar until fluffy. Beat in the egg and vanilla. In another bowl, whisk flour, baking powder, and salt.

Gradually combine the dry and wet components, alternating with the milk, beginning and ending with the dry. Mix until everything is blended.

Pour half the batter into the pan, and sprinkle with half the streusel. Repeat with the remaining batter and streusel.

Bake for 30–35 minutes until a toothpick comes out clean. Cool in the pan for 10 minutes, then transfer to a wire rack. Slice and serve.
