Soups are the soul of the winter season and what's better than a warm bowl of chicken noodle soup? This soup is easy to prepare and packs a lot of flavour. Perfect to enjoy as a dinner during a chilly winter night. So, let's get started with this delightful soup that will satisfy both your body and soul.

450 gm cooked, shredded chicken 8 cups chicken broth 2 tbsp olive oil 1 chopped onion 3 sliced carrots 3 sliced celery stalks 3 minced garlic cloves 1 tsp dried thyme 1 tsp dried oregano Salt and pepper to taste 225 gm egg noodles 1/4 cup chopped fresh parsley Optional: juice of 1 lemon

In olive oil, sauté the onion, carrots, celery, and garlic.

Combine the shredded chicken, chicken broth, thyme, oregano, salt, and pepper in a mixing bowl. Cook for 15-20 minutes.

In the broth, cook the egg noodles.

Remove the bay leaf, toss in the parsley, and season with lemon juice if preferred.
