Dosa is arguably the most popular breakfast dish in India. These crepe-like savoury pancakes are served with various condiments, mainly coconut chutney or sambar. But including cheese makes this dish even more indulgent, as it adds a subtle tang to the dish and provides a smooth and creamy texture overall.
1 cup rice 1/4 cup urad dal Water for soaking Salt to taste Grated cheese Butter or oil Optional: chopped vegetables
Soak rice and urad dal separately for 4-6 hours.
Grind to a smooth batter, mix with salt, and ferment overnight.
Spread dosa batter on a hot tawa.
Add salt, and vegetables, and cook until golden.
Sprinkle grated cheese, fold, and cook until cheese melts.
Serve hot with your favourite chutney or sambar.
