Cham Cham, also known as Chomchom is a traditional Bengali sweet that is popular across India and Bangladesh. This dessert is prepared using chenna and is known for its spongy and soft texture.
1 litre full-fat milk 2 tbsp lemon juice (diluted) 1 cup sugar 4 cups water 1/2 tsp cardamom powder Food coloring (optional) Desiccated coconut or khoya (for garnish)
Boil the milk, wring off the excess water, then add diluted lemon juice to cause the milk to curdle.
Knead chhena for 5 to 7 minutes, or until smooth. Shape the chhena into little ovals or cylinders.
Add the chhena pieces, boil the sugar and water, and simmer covered for ten to fifteen minutes.
Add the optional food colouring and cardamom powder, stir, and allow to cool. Coat with dried coconut flakes or sprinkle khoya on top.
