Hardly there is anybody who does not like to indulge in carrot kheer. But the mere thought of the hassle can make individuals stop making the delectable treat. However, there is a simple recipe of carrot kheer made in pressure cooker which will enable you to save time and make the treat. Take a look at the recipe:

3 carrots ½ cup rice 1 ½ litre full fat milk ¼ cup sugar ¼ cup condensed milk ½ cup chopped mixed nuts ¼ tsp cardamom powder 6-7 saffron strands 2 tsp ghee

Wash and peel the carrots. Grate and keep it aside.

Wash and soak the rice in water.

Take a pressure cooker and add ghee to it. Add mixed nuts and saute and transfer these to a plate and keep it aside.

In the pressure cooker add the carrots and cook it for a while. Add in the sugar. Once the carrot is lightly cooked add the milk and soaked rice. Keep stirring.

Now add the cardamom, saffron strands, cover the lid and cook for 2 whistles. Make sure you remove the whistle before putting on the lid.

Gently remove the lid and add the condensed milk, nuts and stirring the kheer till it attains the desired texture.

Transfer kheer to the serving bowl and enjoy.
