Easy Carrot And Beetroot Soup Recipe For The Winter Season

This carrot and beetroot soup will make sure you get through the winter season in optimum health. It is a simple preparation that packs a lot of flavour and nutrients. Serve it for dinner during those chilly winter nights for the best experience.

Ingredients

2 tablespoons of olive oil 1 onion, chopped 2 cloves garlic, minced 4 large carrots, peeled and chopped 2 medium-sized beetroots, peeled and chopped 1 potato, peeled and chopped 6 cups of vegetable or chicken broth Salt and pepper to taste 1 teaspoon ground cumin 1/2 teaspoon ground coriander 1/2 teaspoon dried thyme 1 bay leaf

Step 1

In a large pot over medium heat, heat the olive oil. Cook until the onion and garlic are softened.

To the pot, add the diced carrots, beetroots, and potato. Cook for another 5 minutes.

Step 3

Pour in the vegetable or chicken broth, making sure the vegetables are well covered. Season with salt, pepper, cumin, coriander, dried thyme, and bay leaf to taste.

Step 4

Bring the soup to a boil, then lower to a low heat, cover, and leave to simmer for 25–30 minutes.

Step 5

Remove the bay leaf and purée the soup by carefully transferring the soup to a blender in batches.

Season with salt and pepper to taste. If the soup is too thick, add more stock to reach the desired consistency.
