Butterscotch ice cream is a creamy treat loaded with the rich flavours of caramelised sugar and nuts. This homemade version uses simple ingredients and steps, making it easy to create your own indulgent dessert.
4 tbsp sugar 2 tbsp unsalted butter 10-12 cashews or 2 tbsp roasted peanuts 400g sweetened condensed milk 2.75 to 3 cups cold whipping cream 1 tsp vanilla extract or butterscotch essence
Crush the cashews into a coarse mixture using a mortar pestle and set them aside.
Melt butter on low heat, then add sugar and stir occasionally until it turns golden brown.
Add crushed cashews to the molten sugar mixture and stir quickly to combine. Pour the praline mixture onto a parchment-lined plate and let it harden.
In a bowl, whip cold cream until soft peaks form, then add condensed milk and vanilla essence.
Fold the praline pieces into the whipped mixture gently until combined.
Freeze the mixture for 6-8 hours until firm, then enjoy your homemade butterscotch ice cream!
