Bread and butter pudding is a classic comfort food made using leftover bread.
6–8 slices of leftover bread 1/4 cup butter, softened 4 large eggs 2 cups of milk 1/2 cup sugar 1 teaspoon of vanilla extract 1/2 teaspoon ground cinnamon 1/4 cup raisins Icing sugar for dusting
Preheat your oven to 180°C. Grease a baking dish with a bit of butter. Spread the softened butter on both sides of the bread slices. Cut the bread into triangles or cubes.
Arrange the buttered bread pieces in the greased baking dish. Sprinkle raisins between the layers of bread.
In a mixing bowl, whisk together the eggs, milk, sugar, vanilla extract and cinnamon until well combined.
Pour the custard mixture evenly over the bread in the baking dish. Press the bread down gently. Let it sit for about 10–15 minutes to ensure
Bake for 30 to 40 minutes. Allow the pudding to cool slightly before serving.
Dust with icing sugar and serve warm, on its own or with a scoop of vanilla ice cream or a drizzle of custard.
