Easy Blueberry Zucchini Bread Recipe For Healthy Teatime Snacking

This blueberry zucchini bread is loaded with nutrients while being absolutely flavourful and easy to prepare. Made using staple ingredients, this variety falls under the category of quick breads, making it one of the easier breads to make.

Ingredients

1 ½ cups flour ½ teaspoon baking powder ½ teaspoon baking soda ½ teaspoon salt 1 teaspoon cinnamon 2 large eggs ½ cup vegetable oil ¾ cup sugar 1 teaspoon vanilla 1 cup shredded zucchini 1 cup of blueberries ½ cup walnuts (optional)

Step 1

Preheat the oven to 350°F (175°C). Grease a 9x5-inch loaf pan.

Step 2

Mix flour, baking powder, baking soda, salt, and cinnamon. Beat eggs, oil, sugar, and vanilla. Stir in zucchini.

Step 3

Combine the wet and dry ingredients. Fold in blueberries and walnuts. Pour into a loaf pan. Bake for 50–60 minutes.

Step 4

Cool in the pan for 10 minutes, then transfer to a rack.
