Beetroot rice is becoming widely popular because of its taste and appealing colours. Not only is this recipe extremely delicious, but it's incredibly healthy too and comes together in just a few minutes with a handful of ingredients. Check out this easy recipe for beetroot rice.
1 cup basmati rice Water for soaking and cooking Oil as needed 2 Cardamom pods 1-inch cinnamon 3 cloves 6 black peppercorns ½ teaspoon mustard seeds ½ teaspoon cumin seeds ½ cup chopped onions Curry leaves 2 medium beetroots, finely chopped or grated 1 teaspoon ginger garlic paste 2 slit green chillies Coriander leaves ¼ teaspoon turmeric powder, red chilli powder, coriander powder Salt to taste
Rinse and soak basmati rice for 20 minutes. Drain the water and set it aside.
Heat oil in a pressure cooker and add mustard seeds and the remaining whole spice. Let them splutter.
Add onions and curry leaves. Saute until lightly golden.
Add ginger-garlic paste, slit green chillies, and coriander leaves. Saute until the raw aroma goes away.
Add beetroots, stir and saute.
Add spices and rice. Mix well and saute for a minute.
Add 1.5 cups of water for cooking. Season with salt and stir. Keep it slightly salty.
Pressure cook for 2 whistles. Once cooked, fluff the rice and serve with salad or raita.
