Beetroot raita is a healthy condiment to accompany your main meals. It is refreshing, delicious, and complements various snacks and cuisines. Here is a quick recipe to try during the festive season.
1 small chopped capsicum 1 grated beetroot 2 cups curd 1 tsp mustard seeds A pinch of red chilli powder 3-4 curry leaves 1 grated carrot Salt as needed 1 tbsp coriander leaves
Wash vegetables and chop or grate them. You can also add chopped onion.
Take curd in a bowl and whisk it so that it turns smooth.
Add chopped vegetables and salt to curd. You will see its colour changing to hue when you mix the ingredients.
Prepare tempering of red chilli powder, mustard seeds, and curry leaves.
Pour the tempering on curd and give it a good mix.
Garnish it with fresh coriander leaves before serving.
