Beetroot curry is a colourful and nutritious dish combining beetroots's earthy sweetness with spices. It is tasty and full of fibre, iron, and vitamins. Enjoy it with rice or roti for a healthy lunch or dinner.
2 beetroots 1 tsp oil 1 tsp mustard seeds 1 tsp cumin seeds 1 onion 2 tomatoes 2 green chillies 1 tsp ginger-garlic paste ½ tsp turmeric powder 1 tsp coriander powder ½ tsp red chilli powder Salt to taste ½ cup coconut milk Fresh coriander leaves
Heat oil in a pan and add mustard seeds. Let it splutter, then add cumin seeds.
Add the chopped onion and sauté until translucent. Add the ginger-garlic paste and sauté for a minute.
Add the chopped tomatoes and green chillies. Cook until tomatoes are soft.
Add the turmeric, coriander, red chilli powder and salt. Cook for a few minutes.
Add the diced beetroots and mix well. Cover and cook for 10-12 minutes or until the beetroots are tender.
Add the coconut milk and simmer for 5 minutes. Garnish with fresh coriander leaves and serve hot.
