2 large eggplants 1 large onion 2 cloves garlic 1 inch ginger 1 teaspoon cumin seeds 1 teaspoon coriander powder 1/2 teaspoon red chilli powder 1/4 teaspoon turmeric powder Salt to taste 1/2 cup water 1 tablespoon oil Chopped cilantro
Roast the eggplants on a grill, then peel off the skin and mash.
Add cumin seeds, onion, garlic, ginger, coriander powder, red chilli powder, and turmeric powder with oil.
Cook for a few minutes and season with salt to taste.
Serve hot, garnished with chopped cilantro.
