The sweet potato is a highly nutritious root vegetable that boasts numerous health benefits, including enhancing gut health and the immune system. Here’s a simple but delicious baked sweet potato recipe for your next healthy meal.
3 large sweet potatoes 2 tablespoons of olive oil 2 pinches of salt 2 pinches of ground black pepper 2 pinches of dried oregano
Assemble all the ingredients and preheat the oven to 175°C. Brush the bottom of a glass or a nonstick baking dish with olive oil.
Rinse the sweet potatoes thoroughly. After they have been washed properly, peel the potatoes and dice them into small to medium-sized square-shaped pieces.
Arrange the sweet potatoes in the baking dish and mix them gently to ensure they are blended with the olive oil. Season the sweet potatoes with oregano, salt, and pepper.
Bake the sweet potatoes in the preheated oven for a good 45 minutes to 1 hour, till they are tender enough to be pierced with a fork.
Once baked to perfection, lay out the sweet potatoes in a bowl or on a plate. Add garnishing, including fresh coriander and mint if you please, and savour your healthy meal.
