Unlike other chicken curries from across India, Himachali chicken curry has a thicker consistency, more spiciness and is packed with authentic Himachali flavours too. 400g Chicken 1 Medium onion, chopped 1 Tsp turmeric powder 2-3 Cloves 1/4 Tsp fennel seeds 1/2 Tsp red chilli powder 1/4 Tsp coriander seeds 1/4 Cup yogurt 1/4 Cup milk 2 Cardamom 1/2 Inch cinnamon stick 3-4 Green chillies 2-3 Garlic cloves, minced 1/2 Inch ginger, minced 2 Tbsp mustard oil Salt, to taste Coriander leaves, for garnish

Marinate the chicken in turmeric, salt, and pepper. Let it rest for a while.

Heat mustard oil in a pan and add the spices. Add chopped onions, ginger, garlic, and green chilies and saute for an additional minute or two.

Transfer the mixture to a mixer grinder and create a smooth paste. If necessary add some water.

In the same pan, again heat the remaining mustard oil and add the prepared masala paste. After a few minutes of cooking, mix milk and beaten yoghurt and close the lid.

Give it a good toss before adding the marinated chicken pieces. Put the lid on the pan and cook it for 30 minutes or until the chicken is done.
