Summer is all about trying different recipes with the king of fruit - mango. To try something easy and healthy, make this spicy mango salad that is both refreshing and satisfying.
2 ripe mangoes 1/2 cucumber 1 red bell pepper 1/4 onion 1/2 cup chopped cilantro 1/4 cup chopped mint 2 tablespoons lime juice 1 tablespoon olive oil 1 tablespoon soy sauce 1 teaspoon grated ginger Salt and black pepper to taste
Combine the diced mango, cucumber, bell pepper, onion, cilantro, and mint.
In a separate bowl, mix freshly squeezed lemon juice, olive oil, soy sauce, grated ginger, salt, and pepper.
Pour the dressing over the salad and toss gently to coat.
Have a taste, adjust the spices as per your preference and serve the summer salad.
