Poha cutlet is a delightful Indian snack made from flattened rice (poha) and an array of spices. This crispy, savoury treat is perfect for teatime or as an appetizer. Here’s a simple recipe to make these delectable cutlets at home.

Ingredients

1 cup poha (flattened rice) 2 medium potatoes, boiled and mashed 1 small onion, finely chopped 2 green chillies, finely chopped 1 teaspoon ginger paste 1 teaspoon cumin seeds 1 teaspoon garam masala 1 teaspoon red chilli powder 1/2 teaspoon turmeric powder Salt to taste Fresh coriander leaves, chopped 1 tablespoon lemon juice 2 tablespoons rice flour (optional, for extra crispiness) Oil for frying

Step 1

Rinse the poha in cold water and drain thoroughly. Set aside for 5 minutes to soften.

Step 2

In a large bowl, combine the softened poha, mashed potatoes, chopped onion, green chillies, ginger paste, cumin seeds, garam masala, red chilli powder, turmeric powder, salt, coriander leaves, and lemon juice. Mix well to form a dough-like consistency. If the mixture feels too moist, add rice flour to bind it better.

Step 3

Divide the mixture into small portions and shape them into flat, round cutlets.

Step 4

Heat oil in a pan over medium heat. Fry the cutlets until they turn golden brown and crispy on both sides.

Step 4

Drain the cutlets on paper towels to remove excess oil. Serve hot with ketchup or mint chutney.
