1 large eggplant, roasted 1/4 cup tahini 2 cloves garlic 2 tablespoons lemon juice 1 tablespoon olive oil Salt and pepper to taste Fresh parsley, chopped (for garnish)
Mash the roasted eggplant flesh with a fork or a potato masher.
Combine the mashed eggplant, tahini, garlic, lemon juice, olive oil, salt, and pepper.
Mix well until smooth.
Transfer the baba ganoush to a serving bowl and garnish with fresh parsley. Serve with pita bread, crackers, or vegetables.
