Lacy thin crepes made with buckwheat flour are an enjoyable variation to the stack of pancakes we’re familiar with for breakfast. Serve with syrup and fruits for the perfect meal.

1 cup buckwheat flour 1 cup milk ¾ cup water 3 eggs 1 teaspoon vanilla extract 2 tablespoons melted butter 1 tablespoon sugar 2 tablespoons almond powder 1 pinch salt

Add the butter and sugar to the milk and stir well to combine.

In a separate bowl, add the dry ingredients and crack in the eggs, before pouring in the milk.

Whisk to make a thick batter before adding the water and diluting its consistency.

Heat a pan will walls with some butter in it and pour in the batter when hot.

Swivel the pan around so that the batter spreads evenly and forms a singular thin layer.

Cook for a couple of minutes on each side and repeat the process. Serve warm with maple syrup and fresh fruit.
