Lacy thin crepes made with buckwheat flour are an enjoyable variation to the stack of pancakes we’re familiar with for breakfast. Serve with syrup and fruits for the perfect meal.

INGREDIENTS

1 cup buckwheat flour 1 cup milk ¾ cup water 3 eggs 1 teaspoon vanilla extract 2 tablespoons melted butter 1 tablespoon sugar 2 tablespoons almond powder 1 pinch salt

METHOD

Add the butter and sugar to the milk and stir well to combine.

In a separate bowl, add the dry ingredients and crack in the eggs, before pouring in the milk.

Whisk to make a thick batter before adding the water and diluting its consistency.

Heat a pan will walls with some butter in it and pour in the batter when hot.
