1 kg pumpkin boiled 1 onion 2 cloves garlic 1 tablespoon olive oil 1 teaspoon dried thyme 1/2 teaspoon salt 1/4 teaspoon black pepper 1 cup vegetable broth 1/2 cup milk or cream 1/4 cup chopped walnuts
Toss pumpkin cubes with olive oil, salt, and pepper. Roast on a baking sheet for 25-30 minutes.
Heat olive oil and sauté onion, garlic, pumpkin, and thyme in the pot.
Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 10-15 minutes.
Blend the soup until smooth using an immersion blender or a regular blender.
Stir in milk and chopped walnuts.
Season with salt and pepper to taste. Serve hot, garnished with walnuts.
