Easy And Delicious Mexican Burrito Bowl For Your Next Meal

Eating balanced meals are one of the most important aspects of maintaining well-being, however, eating a meal that is high on taste is equally necessary. This Mexican-style burrito bowl is a spicy, savoury and colourful treat for anyone looking to try something different during the week.

INGREDIENTS

1 cup cooked rice ½ mashed avocado ¼ cup sour cream ½ tomato, chopped ½ onion, chopped 1 jalapeno, chopped Juice of ½ lemon 2 tablespoons chopped coriander 1 grilled chicken breast, sliced Handful of lettuce, chopped ¼ cup stir-fried spinach Handful of fries, optional

STEP 1

Place the rice in a serving bowl so as to form a ‘bed’ at the bottom.

STEP 2

Combine the onion, tomato, jalapeno and coriander in a separate bowl and season with salt, pepper, lemon juice.

STEP 3

Place the slices of grilled chicken over the rice, before transferring the mixture of vegetables on top of it.

STEP 4

Add the cooked spinach, lettuce, avocado, sour cream and fries on top and serve immediately.
