INGREDIENTS

325 grams brined olives ½ cup olive oil 1 teaspoon red chilli flakes 1 teaspoon dried oregano 1 teaspoon lemon zest 1 tablespoon fresh thyme, chopped 4-5 cloves garlic, chopped

STEP 1

Combine all the ingredients for the marinade in a bowl and set aside.

STEP 2

Drain the brined olives and pat them gently with a paper towel.

STEP 3

Combine the olives with the marinade and mix well before transferring to an air-tight jar.

STEP 4

Refrigerate the batch for up to 2 weeks and serve on a charcuterie board.
