Vegetable stew is a comforting, nutritious dish made with a medley of vegetables simmered in a flavourful broth made of coconut milk. It's a versatile and hearty meal, perfect for pairing with rice, bread, or appam.
1 tbsp oil or ghee 1 tsp mustard seeds 1 onion 1 tsp ginger-garlic paste 1 green chilli 1 carrot 1 potato
1/2 cup green beans 1/2 cup cauliflower florets 1/2 cup green peas 1 cup coconut milk 1/2 tsp turmeric powder Fresh coriander leaves 1/2 tsp black pepper powder 2 cups water
Heat oil or ghee in a pot. Add mustard seeds and let them splutter. Add the chopped onions and sauté.
Add the ginger-garlic paste and slit green chilli. Add the chopped carrots, potatoes, green beans, and cauliflower to the pot.
Pour in 2 cups of water, add the turmeric powder, and salt. Cover the pot, cook for 10-12 minutes.
Once the vegetables are cooked, add the green peas and coconut milk. Simmer for 5 minutes. Add black pepper powder.

Turn off the heat and serve the vegetable stew hot with rice, appam, or bread.
