Plump and juicy prawns cooked into a creamy risotto is a recipe you can revisit even on a weekday, for its simplicity. Packed with flavour and an umami richness, this delicious dinner idea is a perfect meal for one or a special meal for two.

250 grams prawns, cleaned 1.5 tablespoons butter 1.5 cups arborio rice 1 small onion, finely chopped 3 garlic cloves, minced 3 cups water 1 chicken stock cube 1 cup milk ½ cup parmesan cheese 2 tablespoons olive oil 1 tablespoon parsley, chopped Salt and pepper, to taste

Bring the water to a boil and dissolve the stock cube in it and set aside.

Heat the olive oil in a pan and sauté the onion and garlic until translucent and aromatic.

Add the rice and toss in the aromatic oil before ladling in the chicken stock bit by bit, until the rice absorbs it fully.

Add in the milk and continue stirring until the mixture thickens and the rice absorbs the liquid and cooks completely.

Season with a bit of salt and pepper and add in the cheese before mixing thoroughly.

In a separate pan, heat the butter and season the prawns with salt and pepper.

Sear on a high heat, until they turn opaque and curl up, before adding it to the risotto and cooking it for half a minute.

Add the butter in which the shrimp have cooked into the risotto and garnish with parsley. Serve hot.
