Ladies Finger Curry also called Bhindi Curry in Hindi is a tangy and spiced recipe of sautéed okra in an onion, tomato, spices, and yoghurt curry base. Here is how to make this dish.
For tomato paste 3 tomatoes 1-inch ginger 4 to 5 garlic cloves 1 to 2 green chillies 2 tablespoons yoghurt 2 cloves 1 green cardamom ½ inch cinnamon 1 single thin strand of mace
2 tsp oil 250 grams bhindi (okra) 1 tej patta (Indian bay leaf) 1 onion ¼ tsp turmeric powder ½ tsp red chilli powder ½ tsp Coriander Powder ½ tsp cumin powder Water as required salt as required ½ tsp dry fenugreek leaves Coriander leaves
Rinse, dry, and chop okra.
Grind tomatoes, ginger, garlic, green chillies, yoghurt, cloves, cardamom, cinnamon, and mace.
Sauté okra in 2 tbsp oil until lightly browned.
Heat oil, add bay leaf, and sauté briefly.
Cook onions until lightly golden.
Add all spices to lower heat.
Sauté ground paste until thick and oil separates.
Pour in water, season with salt, and mix.
Add sautéed okra; simmer for 5-6 minutes.
Finish with crushed fenugreek leaves and coriander.
