Everyone loves a biscuit at tea time, but sometimes, store-bought biscuits can be packed with hidden sugars and have no added nutrition. These almond cookies are high fibre, have a boost of Vitamin E and are a great way to snack better.
1 cup almond flour ¼ cup granulated sweetener ¼ teaspoon baking powder ¼ teaspoon salt ¼ cup melted coconut oil 1 teaspoon vanilla extract 1 egg
Preheat the oven to 175°C. Line a baking sheet with parchment paper.
In a bowl, whisk almond flour, sugar, baking powder, and salt.
In another bowl, mix coconut oil, vanilla extract, and egg. Combine wet and dry ingredients, forming a dough.
Roll dough into small balls and place on the baking sheet. Flatten balls with a fork, creating a crisscross pattern.
Bake for 12-15 minutes until golden around the edges. Allow cookies to cool on the baking sheet for a few minutes.
