Don't throw away your leftover upma because you can use it to make these incredibly delicious cutlets that come together quickly and pack a lot of flavour. Here's a recipe for you to try:
2 cups leftover upma 1 boiled potato 2 tbsp chopped onions 1 tbsp chopped green chillies 1 tbsp chopped coriander leaves 1 tsp ginger-garlic paste 1/2 tsp cumin seeds 1/2 tsp garam masala 1/2 tsp red chilli powder 1/2 tsp chaat masala Salt to taste 1/4 cup bread crumbs 2 tbsp cornflour Oil for frying
Combine upma, potato, onions, chillies, coriander, ginger-garlic paste, cumin, garam masala, red chilli powder, chaat masala, and salt.
Form into cutlets. Dip in cornflour slurry, then coat with bread crumbs.
Shallow fry in hot oil until golden brown on both sides.
Enjoy with green chutney or ketchup.
