Rasam powder is a versatile South Indian spice mix that can transform a simple bowl of lentils into a flavourful soup known as rasam. You can always have homemade rasam powder on hand because this fragrant mixture is simple to prepare at home and keeps well.
1/4 cup coriander seeds 3 tablespoons of cumin seeds 1 tablespoon of black peppercorns 4 dried red chillies, stems removed 1 tablespoon toor dal 15 curry leaves
Heat a skillet over medium heat. Add the coriander seeds, cumin seeds, peppercorns, dried chilies and toor dal. Cook for 2-3 minutes, stirring frequently, until the spices become fragrant. Remove from heat and allow to cool completely.
Once cooled, transfer the toasted spices to a clean coffee grinder or blender. Add the curry leaves and pulse until a fine powder forms. Be careful not to overgrind into a paste.
Transfer the freshly ground rasam powder to an airtight container. Store in a cool, dry place and use within 3 months for the best flavour.
