2 cups muskmelon peeled and diced into bite-sized pieces 1/2 cup white vinegar 1/4 cup water 1/4 cup granulated sugar 1 teaspoon salt 1/2 teaspoon black pepper 1/2 teaspoon red pepper flakes 1 teaspoon fresh mint
