Durga Pujo is here and apart from pandal hopping, people are also interested in fasting themselves with lots of street side food. During pujo the street side stalls are busy making rolls, biriyani, chowmein and others. Among them, what gathers special attention is street side chowmein. Its specialty goes in the use of lots of sauces. Tap to know th recipe:

Eggs : 2-3 Noodles : half packet Sliced veggies : 2 handful (onion, capsicum, carrot, cabbage) Chilli chopped : 1-2 tbsp Garlic chopped : 2 tbsp Tomato ketchup : 2 tbsp Chilli sauce : 1 tbsp Soy sauce : 1 tsp Vinegar: 1-2 tsp Salt as required Sugar : 2 pinch Black pepper powder : 1 tsp Cucumber : 2-3 tbsp sliced Refined oil for cooking

Boil some water with salt and refined oil. Cook the noodles after the water comes to boil. Drain the water aside and give it a cold water bath. Keep aside.

In a bowl mix salt, pepper and sugar and crush them together. For the sauce mix, add all the sauces together in a separate bowl.

Now whisk two eggs with salt & pepper, scramble and take it out. Fry the scrambled egg till they are little darker/ reddish in color for the street style touch.

Now make sure that ur pan / kadai is on high heat..add some more refined oil and fry chopped garlic & chilli for a minute.

Next add the veggies, the spice mix we made and stir continuously till they are little soften

Add the noodles, spice mix, sauce mix and now on high heat keep frying the noodles until it gets the hakka consistency where all the strands are well separate from each other. It will take 8-10 minutes approx.

Lastly comes the special Kolkata Street part, where hot chowmin is topped with thinly sliced raw onion - cucumber, some more chopped chilli, a drizzle of tomato ketchup, chilli sauce and black pepper powder.
