Ingredients

For Tart Base 150 gm unsalted butter Pinch of fine sea salt 120 gm confectioner's sugar 70 gm yolks 1 teaspoon vanilla extract 60 gm Flour 57 gm Dutch cocoa powder For Ganache 340 gm quality chocolate 300 gm heavy cream 45 ml bourbon 1/4 tsp sea salt 30 gm butter 1/2 cup strawberries 

Step 1

In a large bowl, mix the butter, sugar and salt until you get a soft and creamy texture. Add the egg yolks, cocoa powder, flour, and vanilla extract to this mixture. 

Step 2

Once you have kneaded ingredients into a dough, cut it in half and shape each ball into a disc. Wrap each disc with plastic wrap and refrigerate for at least 1 hour to chill. 

Step 3

Start rolling out the dough. Use a 9-inch tart pan to lightly butter the sides and dust them with cocoa powder. Gently press the dough into the sides, edges and bottom of the pan. 

Step 4

Dock the bottom of the pan with a fork. Cover the surface with plastic wrap, and let the dough chill in the freezer for at least 30 minutes until firm. 

Step 5

Preheat the oven to 180°C. Bake tarts in the preheated oven for about 20 minutes. Meanwhile, melt the chocolate and add it to a heated mix of cream and salt. 

Step 6

Add bourbon and stir until the ganache is smooth. While still warm, add the cubed and softened butter. Stir until the butter has melted and mixed in completely. 

Step 7

Let the ganache cool down slightly and pour it into the tart shell. Top the dessert with sliced strawberries and drizzle leftover ganache on the top.
