Lauki ka paratha is a nutritious paratha made by mixing grated bottle gourd with whole wheat flour and spices. It's rolled into rounds, cooked on a griddle, and served hot, often enjoyed with yoghurt or chutney.

Grate a medium-sized lauki and squeeze out excess water.

In a mixing bowl, combine the grated lauki, whole wheat flour, chopped green chilies, grated ginger, chopped cilantro, and a pinch of salt.

Knead the mixture into a soft dough without adding water, as the lauki will release moisture. Divide the dough into equal portions and shape them into balls.

Roll each ball into a flat round paratha using a rolling pin.

Heat the tawa and cook the paratha on both sides until golden brown, using a little oil or ghee. Serve the lauki ka paratha hot with yoghurt or chutney. Enjoy!
