As a result of rising tomato prices, there is a growing demand for substitute tadka ingredients that can impart flavour without relying on tomatoes. 

Cumin Tadka 

Cumin seeds release their flavour and perfume when heated in ghee or oil. The dals, soups, and vegetable dishes are usually prepared with this tadka. 

Mustard Tadka 

Mustard seeds should be toasted in oil until they begin to crackle. You'll frequently find this tadka in stir-fries, lentil meals, and curries. 

Curry Leaf Tadka 

Curry leaves should be added to hot oil or ghee and allowed to crisp up. This tadka is used to enhance the flavour of many traditional South Indian foods. 

Garlic Tadka 

Minced garlic should be cooked in oil or ghee until it is brown and aromatic. This tadka can be used to enhance the flavour of rice, dal, and curry. 

Red Chili Tadka 

Crisp up some dried red chillies in hot oil or ghee. Spice up your chutneys, lentils, and vegetables with this tadka. 

Asafoetida Tadka 

To make asafoetida (hing), heat oil or ghee until it sizzles then add a pinch. As a digestive aid, this tadka is frequently included in lentil recipes.
