Making Chakli during Diwali is a cherished tradition in Indian households, passed down through generations. These crispy, spiral snacks symbolise the festive spirit, bringing families together to prepare and share them. Here’s how to make them at home.

Ingredients

2 cups rice flour 1 cup besan (gram flour) 1 tsp sesame seeds 1 tsp carom seeds (ajwain) 1/2 tsp turmeric powder 1/2 tsp red chilli powder 1/4 tsp asafoetida (hing) 2 tbsp melted butter or ghee Salt Water Oil dipping sauce

Step 1

In a large mixing bowl, combine the rice flour, besan, sesame seeds, carom seeds, turmeric, red chilli powder, asafoetida, and salt.

Step 2

Pour the melted butter or ghee into the dry mixture. Rub it into the flour with your fingers until it forms a crumbly texture.

Step 3

Slowly add water, little by little, and knead into a soft but firm dough. The dough should be smooth and pliable.

Step 4

Grease a chakli maker or a piping bag with a star nozzle. Fill it with the dough and press it to create spiral shapes on small squares of parchment paper.

Step 5

Heat oil in a deep frying pan. Once hot, carefully slide the chaklis into the oil. Fry them on medium heat until golden brown and crispy.

Step 6

Remove the chaklis with a slotted spoon and drain on paper towels. Let them cool completely before storing in an airtight container.
