Kaju Katli, a Diwali favourite, is a smooth and rich cashew-based sweet that melts in your mouth. Made with ground cashews, sugar syrup, and often garnished with silver vark, this delicacy symbolises the sweetness and joy of the festive season.
1 cup cashews (kaju) ½ cup sugar ¼ cup water 1 tbsp ghee ½ tsp cardamom powder Silver vark
In a blender, pulse the cashews into a fine powder. Be careful not to over-blend, as it may release oil and form a paste. Sift the powder to remove any lumps.
In a pan, combine sugar and water. Heat the mixture over medium heat, stirring until the sugar dissolves and a one-string consistency syrup forms.
Reduce the heat to low and gradually add the cashew powder to the sugar syrup, stirring constantly. Cook the mixture until it thickens and starts to leave the sides of the pan (about 5-7 minutes).
Transfer the mixture onto a greased surface and let it cool for a minute. Knead it into a smooth dough while still warm. Add cardamom powder for extra flavour if desired.
Roll the dough into a thin layer (¼-inch thickness) using a rolling pin. Apply silver vark if using. Cut into diamond shapes using a sharp knife.
Let the Kaju Katli cool completely before serving. Store in an airtight container.
