With all the deep-fried and sugar-loaded treats that are synonymous with Diwali bingeing, try making these clutter-breaking baked spring rolls packed with vegetables. Bulk up the protein value by throwing in some tofu or paneer and serve with a delicious chilli sauce on the side, for an extra kick of spice.

1 packet mushrooms, sliced 1 onion, finely chopped 6 garlic cloves, minced 1 carrot, finely chopped ½ cup chopped spinach 1 red bell pepper, finely chopped 1 teaspoon dried oregano 2 teaspoons sriracha sauce 1 tablespoon butter Spring roll wrappers Salt and pepper, to taste

Heat the butter in a pan until foamy before adding the onions and garlic to sauté for a couple of minutes.

Add the chopped carrot and cook for a couple of minutes, before adding the mushrooms and tossing on a high flame until they shrink.

Add the spinach and bell pepper before seasoning with salt, pepper and oregano.

Cook until the leaves have wilted and add the hot sauce before stirring well to combine.

Cool down the mixture completely while you preheat the oven to 190°C.

Place some of the filling on a spring roll wrapper and seal the edges tightly using some water.

Brush with oil or butter and place on a baking tray to cook in the oven for 20 minutes, until golden brown in colour. Serve hot.
