Dirty Martini Salad Dressing For Olive Lovers

For times when you crave for a martini in the middle of the day, this martini dressing on salads, with some serious olive flavour and a touch of gin, is perfect to drizzle over your lunch.

INGREDIENTS

¼ cup olive brine 2 teaspoons Dijon mustard 2 garlic cloves, minced 1 cup EVOO ½ teaspoon artisanal gin 2 sprigs rosemary, chopped ½ teaspoon ground coriander powder Salt and pepper to taste

METHOD

Add the olive brine, mustard and garlic to a food processor and blitz well.

METHOD

Drizzle in the olive oil in a slow stream while the food processor is on and allow everything to emulsify lightly.

METHOD

Add the rosemary, gin, coriander powder and season with salt and pepper before combining.

METHOD

Store in an air-tight jar for up to two weeks or drizzle over any crunchy salads of your choice.
