Dinner Special: Easy Recipe To Make Egg Fried Rice

Made with eggs, rice and vegetables, egg fried rice is perfect for a wholesome dinner. Here is the recipe make it at home.

Ingredients

4 large eggs (beaten), 3 tbsp peanuts, vegetable oil, 1 cup diced onion, 1 1/2 to 2 cups diced mixed vegetables (such as bell pepper, carrots, zucchini), 1/2 cup sliced scallions, a pinch of salt, 4 cups cooked overnight jasmine rice, 2 1/2 tbsp soy sauce, 1/2 tsp five-spice powder, 1 tsp toasted sesame oil

Step 1

Heat oil in a skillet and add eggs. Scramble them for about a minute and turn off the heat. Drizzle some oil in a wok and add the onions and cook them for about a minute.

Step 2

Add the mixed vegetables and scallions and cook for 2 minutes. Then season with a pinch of salt. Add the cooked rice and cook well.

Step 3

Then add the remaining seasonings followed by scrambled eggs and stir to mix again. Garnish with remaining sliced scallions. Serve immediately.
