Dhaba-Style Desi Chicken Masala Recipe To Try At Home

The roadside dhaba that you might have visited during your road trips offers delicious food. The desi spicy chicken masala is one of the few dishes whose recipe might make it difficult to nail the exact dhaba-style flavours back at home. However, here is a recipe to try: 

Ingredients

500 g chicken, cut and cleaned  2 onions, sliced 2 tomatoes, sliced 2-3 green chillies  2 tablespoons of ginger-garlic paste  ½ cup plain yoghurt  2 tablespoons of cooking oil  1 teaspoon of cumin seeds  1 cinnamon stick  2-3 cardamom pods  2-3 cloves  1 teaspoon turmeric powder  1 teaspoon red chilli powder  Salt to taste  2 handfuls of coriander leaves for garnishing

Step 1

Heat the oil in a large pan over medium heat. Add cumin seeds, cinnamon sticks, green cardamon pods and cloves. Saute for a minute. 

Step 2

Add the chopped onions to the pan and cook till golden brown. Toss in the ginger-garlic paste and sauté. Add chopped tomatoes to the pan and cook until they're soft. 

Step 3

Add turmeric powder, coriander powder, cumin powder, red chilli powder, and salt. Mix well. 

Step 4

Add the chicken, combine it and cook until the chicken is lightly browned. Reduce the heat, add plain yoghurt and stir well.  

Step 5

Cover the pan with a lid and cook over low heat for 20–25 minutes. Check for seasoning and adjust the salt and spices.  

Step 6

Garnish with coriander leaves and serve with rice or roti.
