1 brinjal 1 tomato 2 green chilies 2 garlic cloves 2 tsp ghee Pinch of hing 1 onion ½ inch ginger ½ tsp Turmeric powder ½ tbsp coriander powder ½ tbsp red chili powder ½ tsp garam masala Salt as per taste
In a baingan, make small slits and stuff green chilies and garlic cloves inside. Grease the baingan with the clarified butter. Roast it on a medium to low flame.
Keep it aside and let it cool. Also, roast a tomato and keep it aside. Then, peel off the baingan skin.
In a bowl, add the baingan and mash it properly. Also, add the roasted tomato.
in a pan, add ghee and hing. Sauté. Add chopped onion and cook. Add ginger, turmeric powder, red chili powder, and coriander powder. Mix well.
Add roasted tomatoes and mix all the ingredients well. Add the roasted, mashed baingan mixture and let it cook. Add other spices and let it cook.
Make a hole in the center of the bharta and place a burnt charcoal piece with ghee on the top. Cover with the lid for a minute and let the smoke infuse.
After a minute, garnish with fresh coriander leaves and chilies. Serve!
