Delightful Vegan Strawberry Cupcakes: A Sweet and Dairy-Free Treat

Indulge in the delightful goodness of vegan strawberry cupcakes. Made with fresh strawberries and topped with a luscious strawberry frosting.

Ingredients

1 1/2 cups all-purpose flour 3/4 cup granulated sugar 1 tsp  baking powder 1/2 tsp  baking soda 1/4 tsp salt 3/4 cup almond milk 1/4 cup vegetable oil 1 tsp  vanilla extract 1 tsp apple cider vinegar 1 cup fresh strawberries, chopped For the Strawberry Frosting: 1/2 cup vegan butter, softened 2 1/2 cups powdered sugar 1/4 cup fresh strawberry puree 1/2 tsp vanilla extract

Step 1

Preheat the oven to 175°C and line a cupcake pan with cupcake liners. Take a bowl add the flour.

Step 2

Add sugar, baking powder, baking soda, and salt. Mix them well. In a separate bowl, combine the almond milk and vegetable oil.

Step 3

Add vanilla extract, and apple cider vinegar. Gradually mix  the wet ingredients to the dry ingredients.

Step 4

Stir well and Gently fold in the chopped strawberries.  Pour the batter evenly into the cupcake liners.

Step 5

Bake in the preheated oven for 18-20 minutes. Now take a bowl and beat the softened vegan butter until creamy.

Step 6

Gradually add the powdered sugar, strawberry puree, and vanilla extract to the bowl.

Step 7

Once the cupcakes are completely cooled, frost them with the strawberry frosting using a piping bag or a knife.

Step 5

Garnish the cupcakes with fresh strawberry slices or sprinkles. Enjoy!
