Indulge in the creamy goodness of vegan blueberry ice cream, made with luscious frozen blueberries and rich coconut milk. A refreshing treat for hot summer days!
2 cups frozen blueberries 1 can full-fat coconut milk 1/4 cup maple syrup 1 tsp vanilla extract
Blend frozen blueberries, coconut milk, maple syrup, and vanilla extract in a blender.
Blend until smooth and creamy, adjust the sweetness. Pour the mixture into an ice cream maker and churn accordingly.
Once the desired consistency is reached, transfer the ice cream to an airtight container and freeze.
Serve the vegan blueberry ice cream in bowls or cones. Garnish with blueberries and enjoy!
