6 tbsp unsalted butter 60 gms semi-sweet chocolate, coarsely chopped 1 cup granulated sugar 2 large eggs, at room temperature 1 tsp pure vanilla extract ¾ tsp peppermint extract ½ cup unsweetened natural cocoa powder ½ cup all-purpose flour ½ tsp salt ⅔ cup chocolate chips
Combine the butter and chocolate and microwave for 30-40 seconds and mix till smooth. Whisk together the sugar, eggs, vanilla extract, and peppermint extract until completely combined.
Then add the cocoa, salt, flour, vanilla and peppermint. In a lined baking tray, bake at 190°C for 30-40 minutes until set in the centre. Cool before serving.
