Fragrant basmati rice infused with fresh mint, ginger, and spices. A delicious, easy-to-make recipe bursting with flavorful goodness!
1 cup basmati rice 2 cups water 1 cup fresh mint leaves 1 onion, chopped 2-3 green chilies, chopped 1-inch piece of ginger, grated 3-4 cloves of garlic, minced 1/4 cup grated coconut (optional) 1/4 cup roasted peanuts (optional) 1/2 tsp cumin seeds 1/2 tsp mustard seeds 1/2 tsp turmeric powder 1 tbsp lemon juice 2 tbsp oil or ghee (clarified butter) Salt to taste
Wash the rice thoroughly and Soak it for about 20-30 minutes. Drain the and keep the rice aside.
In a blender add the mint leaves, green chilies, grated coconut and a pinch of salt. Blend until smooth.
In a pan, heat oil. Add cumin seeds and mustard seeds, chopped onions, grated ginger and minced garlic.
Saute well. Add the mint paste and turmeric powder. Now Add the soaked rice to the mint mixture and gently mix.
Add two cups of water and salt to taste. Once the water comes to a boil, cook until the rice is fully cooked and fluffy.
Garnish with roasted peanuts, drizzle lemon juice over the rice and enjoy!
