Delicious Vegetable Uttapam For A Wholesome Breakfast

Vegetable Uttapam is a savory South Indian pancake, topped with colorful veggies like onions, tomatoes, and bell peppers. Made from a fermented rice-lentil batter, it’s soft, crispy, and packed with flavor. Paired with chutney or sambar, it’s a wholesome, delicious meal.

Ingredients

2 cups dosa batter (store-bought or homemade) 1/4 cup onion 1/4 cup tomato 1/4 cupbell peppers 1/4 cup grated carrot 2 tsp coriander leaves 1-2 green chillies Salt Oil 

Step 1

In a bowl, mix the chopped onions, tomatoes, bell peppers, carrots, green chillies, and coriander leaves. Add a pinch of salt and mix well.

Step 2

Heat a non-stick tawa. Lightly grease it with a few drops of oil. Pour a ladleful of dosa batter onto the hot pan and spread it gently into a thick, circular shape. Uttapam is typically thicker than a dosa.

Step 3

Immediately sprinkle the vegetable mixture evenly over the batter, pressing down gently with a spatula so that the veggies stick.

Step 4

Drizzle a few drops of oil or ghee around the edges. Cook on medium heat for about 2-3 minutes.

Step 5

Carefully flip the uttapam and cook the other side for another 2-3 minutes until it is cooked through and the veggies are slightly roasted.

Step 6

Remove from the pan and serve hot with coconut chutney, sambar, or tomato chutney.
