Indulge in the exquisite flavors of vegan tikka masala. Marinated tofu in a rich, creamy sauce infused with aromatic spices.
For the Tikka: 1 block of firm tofu, drained and cubed 2 tbsp tikka masala spice mix 2 tbsp lemon juice 2 tbsp olive oil For the Sauce: 1 tbsp olive oil 1 onion, chopped 3 cloves of garlic 1-inch piece of ginger 2 diced tomatoes 1 can coconut milk 2 tbsp tomato paste 2 tsp garam masala 1 tap paprika 1/2 tsp turmeric 1/2 tsp ground cumin Salt and pepper to taste Fresh coriander for garnish
In a bowl, add the tikka masala, lemon juice, and olive oil. Add the cubed tofu and marinate for 20 minutes.
Now Preheat the oven 200°C. Place the marinated tofu cubes on a baking sheet and bake for 20-25 minutes.
In a saucepan, heat olive oil .Add the chopped onion, minced garlic, and grated ginger. Saute well.
Add the diced tomatoes, coconut milk, tomato paste, garam masala, paprika, turmeric, cumin, salt, and pepper.
Stir well and cook for about 15-20 minutes. Remove the sauce from heat and let it cool slightly.
Now blend the sauce in a blender. And add it to the pan. Transfer the baked tofu and cook for 5 minutes.
Garnish with coriander. Serve the vegan tikka masala with naan bread or rice.
