Rasabali is a traditional sweet from the Indian state of Odisha. The sweet packs a lot of flavours along with a creamy and rich texture. Here's how you can make it at home:
250g chhena (cottage cheese) 1 litre milk 1/2 cup sugar 1/4 tsp cardamom powder A few saffron strands (optional) 1 tbsp semolina (sooji) 1 tbsp flour (maida) Ghee or oil for frying
Boil milk until it reduces by half. Add sugar, cardamom, and saffron. Simmer until slightly thickened.
Knead chhena with semolina and flour until smooth. Shape into flattened discs.
Fry discs in hot ghee or oil until golden brown. Drain on paper towels.
Soak fried discs in warm rabri for at least an hour. Serve chilled or at room temperature.
