Lots and lots of pumpkins are available in the market for the. Why not make something nutritious as well as delicious as roasted pumpkin pasta?
1 large pumpkin 1 tbsp olive oil 1/2 onion 2 cloves garlic 1/2 tsp dried sage 1/4 tsp red pepper flakes 1 cup heavy cream 1/2 cup grated Parmesan cheese 1/2 cup pasta (any variety) Salt and pepper to taste
Preheat the oven to 200°C. Toss pumpkin chunks with olive oil, salt, and pepper. Roast until tender.
Sauté onion, garlic, roasted pumpkin, dried sage and red pepper flakes.
Pour in heavy cream. Add cooked pasta to the pumpkin sauce. Serve.
